CELLtoFOOD - Cellular agriculture for sustainable and innovative food production

The CELLtoFOOD project aims to develop and optimize an open-access, laboratory-scale protocol for producing cultured meat and seafood through a sustainable and circular-economy approach. Responding to global population growth and the rising demand for animal-derived foods, the project explores cellular agriculture as a viable alternative to conventional farming, reducing environmental impact and resource use.

CELLtoFOOD focuses on replacing traditional growth media with food-grade by-products from the agri-food and fishery sectors, increasing sustainability while lowering production costs. The project integrates expertise in cell culture, biomaterials, and 3D bioprinting to establish optimized conditions for growing muscle and adipose cells, generating edible bio-inks, and fabricating structured meat and fish constructs.

Alongside the technological development, CELLtoFOOD assesses consumer perception and willingness to pay for cultured products to understand market potential and societal acceptance. All protocols and results will be openly shared to support collaboration, transparency, and future innovation.

Ultimately, the project seeks to advance sustainable food production, reduce waste, and contribute to next-generation solutions for global food security.
